ST. CHARLES – Damian McBeth recognizes that opening a restaurant in St. Charles means going up against heavy hitters.
But with The Spotted Fox offering 30 craft beers and food made from scratch, he said the team at the east side alehouse wants to make it a destination.
The restaurant is targeted to open Nov. 16 at the former Bennigan’s, 3615 E. Main St., across from Charlestowne Mall. It has been gutted and renovated and should have a patio ready for the spring, said McBeth, the general manager.
McBeth, 38, has worked in the restaurant business since he was a teen and has been in management for 10 years, he said. He said opening restaurants never gets old.
“It’s always a thrill,” he said.
The Spotted Fox’s chef is a graduate of Le Cordon Bleu and will serve American contemporary food – such as gourmet burgers, pasta dishes, salads and steak – with a modern, upscale twist, McBeth said.
Vegetarian, vegan and gluten-free meals will be offered.
The restaurant will be open daily for lunch and dinner, he said, and it will offer a Sunday brunch, which will feature a live cooking station.
McBeth said prices will be competitive.
“We’re willing to sacrifice our profit margin to make sure our price points fit the economy we’re living in,” he said.
The renovated restaurant will include spacious booths and tables, McBeth said, explaining they want to promote groups.
