In-store cooking classes to take place at Prisco’s

AURORA – Three winter-spring cooking classes, including a craft beer workshop, will be offered at Prisco’s Fine Foods in Aurora through the month of April.

Returning to lead the 15th annual series is Prisco’s culinary instructor and a former Aurora public school educator Phyllis Kramer. The store CEO, Rob Prisco, will serve wine and beer samples to complement dishes prepared by Kramer.

• “Pasta Perfection” will take place from 8:30 to 10:30 a.m. Saturday, Feb. 23. The class will focus on frozen stuffed pastas, and students will learn to cook wild-mushroom tortellaci with sausage, mushroom and Asiago sauce; goat cheese and roasted red pepper ravioli with spicy shrimp sauce; rotolo with creamy tomato vodka sauce; and white bean stew with spinach and pancetta served over potato gnocchi.

• The class “50 Shades of Chicken” will take place from 6:30 to 8:30 p.m. March 14. Students will learn how to transform chicken by boning trussing, brining, butterflying and using rubs. Kramer will also demonstrate how to prepare Coquettish Croquettes, Inner Greek Goddess chicken-artichoke bake, spicy poblano chicken chili, glazed sticky Chicken fingers, juicy Moroccan thighs and “Chicken under the Covers,” chicken spinach phyllo pie. Dessert will conclude the class.

• The class “Grin and Beer It” will take place from 1 to 3 p.m. March 30 and will feature tastings of eight craft beers. Class co-leaders will be Andy Guzauskas of Prisco’s and Gary Nazzarini of Glunz Beer. They will detail production processes and food  while offering snacks and appetizers. The class limited to 20 people. The cost is $25 a person.

• The class “Cocktail Party” will take place from 6:30 to 8:30 p.m. April 12. It will showcase party appetizers and small-plate recipes such as salmon salad cups with fennel slaw, pork loin canapés with Jack Daniel’s whiskey sauce, bacon cheddar popcorn and more.
