GENEVA – The Herrington Inn and Spa in Geneva will host a four-course Duckhorn Vineyards wine event at 6 p.m. Thursday, June 11, at Atwater’s Restaurant at the Herrington Inn, 15 S. River Lane in Geneva.
Duckhorn Vineyards wines that will be served at the event include the sauvignon blanc, Migration, cabernet sauvignon and the Paraduxx. Sauvignon blanc will be paired with the first course, which is a grilled California white sturgeon, citrus mojo, pickled radish and shaved carambola.
The Migration – a high-toned wine with red fruit flavors of strawberry, cherry and cranberry and hints of orange-cinnamon spice – will be paired with the second course, a sumac-rubbed Strauss farms veal tenderloin over whipped salsify, charred rhubarb cherry compote and a cranberry ginger glaze.
The cabernet sauvignon will be paired with the third course, which is an Asian-braised waygu short rib over a sweet corn scallion cake. The Paraduxx – a bold and expressive blend – will be paired with the fourth course, which is a Maple Leaf Farms duck breast and confit “Wellington” foie gras mousse, roasted beet puree, sautéed fiddle head ferns and blackberry foam.
