Slaboszewski said in China she was used to late-night summertime street food favorites, adding it took some getting used to in the U.S. where eateries close early compared to her home country.
She said her focus is to serve authentic Chinese dishes, rather than Americanized interpretations.
She and Davis said diners will neither find sweet-and-sour dishes on the menu nor Asian fusion, for example.
In creating Hot Pan, Slaboszewski said she remodeled extensively, installing a partial divider between the bar and dining room, and adding a warm new color scheme, booths, banquette and tables. The restaurant opens onto a roomy foyer set up to accommodate take-out orders. Off the open kitchen, it is well removed from the comfortable dining room.
