A team of 14 employees, including baristas, bakers and other staff, work at the cafe. The staff members help make up the vibrant environment that sees about 150 lunch orders a day.
“You go out there and everyone is running into people they know,” Cobb said. “It’s a good vibe.”
Part of the draw of the cafe is the coffee itself, which is from Sparrow Coffee Roastery in Chicago. Cobb said Sparrow Coffee Roastery is selective with only a handful of cafes in the suburbs carrying the coffee. The Cobbs worked with the company to pin down a signature blend of Colombian, Sumatran and Brazilian beans.
Beyond that, there is also decaf and espresso. The various coffee beverages themselves are all handmade, often including Ghirardelli chocolate and pure cane sugar.
“We really take pride in it,” Cobb said. “ Every bakery item is baked here; every sandwich is made here; and the teas we brew here. Everything we do, we make here.”
