Among the favorite dishes are the lobster quesadillas, along with the brisket version, and the weekend's poke nachos [pronounced po-kay] based on a popular Hawaiian recipe calling for raw sashimi-grade tuna, Lindsey De Los Santos said. The latter encompasses homemade wonton chips, avocado, seaweed strips, sesame seed, serrano pepper and sriracha aioli, and will be one of the items offered at Festival of the Vine's Flavor Fare in Geneva in September, along with the quesadillas and a pork belly taco.
Also popular is the Kojo short rib taco prepared with agave teriyaki sauce, sesame slaw and garlic aioli, she said.
"We have vegan and vegetarian tacos on our menu," Lindsey De Los Santos said, with corn tortillas always available as a gluten-free option – all clearly marked on the menu.
She said they feature appetizers such as bacon and beer queso, bourbon barbecue wings and a homemade flatbread, along with the gourmet street tacos, and have happy hour specials daily from 5 to 7 p.m.
