Chef and author Marc Vetri from Philadelphia will appear at a book signing for “Mastering Pizza" at North American Pizza & Culinary Academy in Lisle.

LISLE – North American Pizza & Culinary Academy founders Master Istruttore Leo Spizzirri and Chef Instructor Anthony Iannone will welcome James Beard Award-winning chef and cookbook author Marc Vetri for a demonstration, book signing and pizza party at 6:30 p.m. May 8 in Lisle.

Vetri, owner of Vetri Cucina in Philadelphia and Las Vegas, will do a chef demo with Spizzirri, before signing copies of his new cookbook, “Mastering Pizza: The Art and Practice of Handmade Pizza, Focaccia and Calzone,” a news release stated.

Pizzas from the book, such as Mortadella Rotolo, Zucchini Pizza and Pizza al Taglio will be served throughout the evening at the academy at 1970 University Lane. Tickets cost $65 per person and may be purchased at www.pizzaculinaryacademy.com. Price includes a copy of the cookbook to be personalized and signed.

“I have great respect for what Chef Vetri has done to promote artisan pizza making in the U.S., and it’s an honor to have him at our school, where our focus is to educate both amateurs and professionals in the same manner,” Spizzirri stated in the release.

Within two years of Vetri's restaurant's debut, he was named one of Food & Wine's "Best New Chefs." In 2005, he won the James Beard Award for "Best Chef Mid-Atlantic." Another cookbook by Vetri, “Il Viaggio di Vetri,” was named one of the top cookbooks of 2011 by Bon Appetit.

The local academy teaches everything from basic knife skills to artisanal baking to specific culinary and cuisine-specific explorations. And at 6:30 p.m. April 26, the "Bubbles & Bites Sparking Wine Primer" will be the inaugural wine class taught by resident sommelier Michael Bottigliero. He is described as having an approachable way of teaching all things wine.

The academy notes the $100 class is for all levels – "from the curious to the serious wine drinker who really wants to nerd out with us."

It offers culinary classes to students of all skill levels, including a five-day pizza program that will allow students the opportunity to earn the title of Certified Pizzaiolo. Pizza classes are led by a master instructor, and culinary classes are led by professional chefs. To see the full class calendar, go to www.pizzaculinaryacademy.com.
