Kids love to celebrate Mother’s Day. Making homemade gifts and preparing her favorite dishes are great ways to let Mom know you’re thankful for all she does. This year, instead of fighting the brunch crowds and spending lots of money, make her a delicious brunch at home, seasoned with love.
Baked french toast can be made the night before and baked on Mother’s Day morning. Melt a stick of butter in a 9X13 casserole dish, and place 6 slices of brioche bread in the bottom of the pan. Mix 1 cup brown sugar with 2 tsp cinnamon, and sprinkle 1/2 the mixture over the bread. Layer with 6 more slices of bread. Whisk 8 large eggs and 2 cups milk in a bowl, and pour over the bread layers. Sprinkle remaining sugar mixture on top, then cover and refrigerate overnight. Bake the next morning, covered, at 350 degrees for 30 minutes. Uncover and bake 15-20 more minutes, or until set. Serve with vanilla or cinnamon flavored coffee.
Croissant sandwiches are also a big hit. Fry 1-2 eggs per sandwich until the yolks are no longer runny. Cook 3 slices bacon or sausage links (sliced lengthwise) per sandwich until well done. Layer the eggs, meat, and a slice of mom’s favorite cheese on a fluffy croissant. Serve with a bowl of fruit and a glass of orange juice.
For something quick and easy, prepare a big bowl of oatmeal with a variety of interesting toppings and mix-ins. Using package directions, cook oatmeal until creamy. Serve with small bowls on the side filled with brown sugar, sliced almonds, walnuts, pecans, or other favorite nuts, along with fresh fruits. Blueberries, sliced strawberries, and blackberries are great choices. Add dried cranberries, cherries, or dates.
